LORI'S HOMESTYLE CHOCOLATE-CHIP COOKIES

• 2 1/4 cups of all purpose flour
• 1 teaspoon of baking soda
• 1 teaspoon of salt
• 1 cup of butter or margarine { softened }
• 3/4 cup of granulated sugar
• 3/4 cup of packed brown sugar
• 1 teaspoon of vanilla extract
• 2 farm fresh eggs
• 2 cups of chocolate chips
• 1 cup of chopped nuts { optional }

  Preheat oven to 375 degrees.Combine flour,baking soda and salt in a small bowl.Beat butter,brown sugar,granulated sugar and vanilla in large bowl.Add eggs,one at a time beating well.Gradually beat into a flour like mixture.Stir in chocolate chips and nuts Drop a rounded teaspoon onto a un-greased cookie sheet. Bake until golden brown about 9-11 minutes Let stand for a couple of minutes; remove and place on wire racks to cool.This recipe makes about 5 dozen cookies

  PeanutButter-OatMeal Cookies

  • 1-1/2 cups of shortening
  • 1-1/2 cups of peanutbutter
  • 2 cups of brown sugar
  • 3 eggs
  • 2 tsp of vanilla extract
  • 3 cups of quick cooking oats
  • 2 cups of whole wheat flour
  • 2 tsp of baking soda
  • 1 tsp of salt
  In a mixing bowl, cream shortening and peanutbutter. Add brown sugar, eggs and vanilla; Mix well. Combine oats,flour,bakingsoda and salt; add to the creamed mixture and mix well. Drop by a rounded teaspoon onto an ungreased baking sheet. Flatten with a fork. Bake at 350 degrees for 12 minutes or until done. Makes about 6-doz.

  Neiman Marcus Cookies

  (Recipe may be halved)
  • 2 cups butter
  • 4 cups flour
  • 2 tsp. soda
  • 2 cups sugar
  • 5 cups blended oatmeal ***
  • 24 oz. chocolate chips
  • 2 cups brown sugar
  • 1 tsp. salt
  • 1- 8 oz. Hershey Bar (grated)
  • 4 eggs
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 3 cups chopped nuts (your choice)
  *** Measure oatmeal and blend in a blender to a fine powder. *** Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt,baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies. Have fun!!!

  Quaker Ginger Cookies

  yields about 9 dozen
  • 3 sticks margarine, melted
  • Add 1/2 cup molasses
  • 2 cups sugar
  • 2 eggs beaten.Beat well.
  • Sift together and add to above mixture:
  • 4 cups flour (measure unsifted) 4 tsp. soda, 2 tsp. cinnamon,
  • 2 tsp. powdered ginger
  • 1 tsp. ground cloves
  Refrigerate dough several hours. Make into small balls, roll in sugar. Bake at 350F until firm and brown, about 8-10 minutes.

  Old Fashioned Sugar Cookies

  " Use cookie cutters and decorations for holiday cookies. "
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup sour cream
  1 Sift flour into large mixing bowl. Resift with salt, soda, baking powder and cinnamon.
  2 In a separate bowl, cream the butter or margarine with sugar until fluffy. Add eggs one at a time and mix well.
  3 Add butter mixture to dry ingredients , alternately with sour cream, mixing until smooth after each addition.
  4 Add vanilla. Wrap dough in waxed paper and chill until firm enough to roll, about 2 hours.
  5 Preheat oven to 350 degrees F.
  6 Roll dough on floured surface to about 1/4 inch thick. Cut with large cookie cutter; place on ungreased cookie sheet.
  7 Sprinkle with sugar and bake for 10 to 12 minutes or until lightly browned.

  Adam's Dirt Cookies

  " Cookies with little pieces of cookie in them. The little pieces look like dirt but they taste great. Ridiculicious!! "
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 cup butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chocolate sandwich cookie crumbs
  1 Sift together the flour, baking soda and salt. Set aside. In a medium bowl, cream the white sugar, brown sugar, and the butter together until smooth. Stir in the egg and vanilla. Add the dry ingredients and mix until just combined. Place the chocolate cookies in a heavy ziplock bag and crush them with a rolling pin until the pieces are mostly about the size of peas. Stir the crushed cookies into the dough. Cover and chill the dough for 1/2 hour.
  2 Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  3 Drop dough by rounded spoonfuls onto the prepared cookie sheet. Bake for 10 to 11 minutes in the preheated oven. Remove to cool on wire racks.

  • 1 cup all-purpose flour
  • 1 1/4 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1/2 cup chopped walnuts
  • 1 cup quick cooking oats
  • 1 cup raisins
  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  1 Preheat oven to 375 degrees F (190 degrees C). 2 Mix dry ingredients, then add remaining ingredients. Dough will be thin. 3 Drop by teaspooonsful onto cookie sheet. Bake for 10 to 12 minutes. Makes 2 dozen

  Peanut Butter Cookies

  " Very easy recipe: you mix all the ingredients in one bowl. Makes a very soft peanut butter cookie. No need to press cookies down before you bake them. Very good! "
  • 1/2 cup margarine
  • 1/2 cup peanut butter
  • 1 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  1 Preheat oven to 350 degrees F (175 degrees C).
  2 In a medium bowl, cream together the margarine, peanut butter, and sugar. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the peanut butter mixture. Drop by rounded spoonfuls onto the unprepared cookie sheet.
  3 Bake for 8 to 10 minutes in the preheated oven. Do not overbake: cookies will be soft and chewy. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  Pudding Chocolate Chippers

  • 1 cup shortening
  • 1 cup white sugar
  • 3/4 cup packed brown sugar
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 ounces semisweet chocolate chips
  1 Preheat oven to 350 degrees F (175 degrees C).
  2 In a large mixing bowl cream the shortening with the white and brown sugars. Stir in the instant vanilla pudding mix. Lightly beat the eggs then add them to the creamed mixture. Mix well.
  3 Sift the flour, baking soda and salt together. Add the flour mixture to the egg mixture. Mix until combined. Stir in the chocolate chips. Drop teaspoonfuls of the dough onto ungreased cookie sheets about 2 inches apart.
  4 Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes or until done.

  Monster Cookies

  • 6 eggs
  • 2 1/3 cups packed brown sugar
  • 2 cups white sugar
  • 1/2 tablespoon vanilla extract
  • 4 teaspoons baking soda
  • 1 cup butter
  • 2 2/3 cups peanut butter
  • 9 cups rolled oats
  • 2 cups semisweet chocolate chips
  1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  2 Cream butter and peanut butter together. Add the sugars and stir until well mixed.
  3 Add eggs one at a time, then add vanilla.
  4 Mix oatmeal and baking soda separately, then stir into batter.
  5 Add chocolate chips last.
  6 Drop by heaping teaspoons onto cookie sheets. Bake for 12-15 minutes.

  Mrs. Fields Cookie Recipe

  " These are just like Mrs. Fields...makes 112 cookies. "
  • 2 cups butter, softened
  • 2 cups white sugar
  • 2 cups packed brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 4 eggs
  • 4 cups all-purpose flour
  • 5 cups rolled oats
  • 4 cups semisweet chocolate chips
  • 8 ounces finely grated chocolate bar
  • 3 cups chopped walnuts
  1 Preheat oven to 350 degrees F (180 degrees C).
  2 Cream together butter or margarine, white sugar, and brown sugar. Add eggs and vanilla.
  3 Mix together in a separate bowl: salt, baking powder, baking soda, flour and oatmeal (put small amounts of oatmeal in blender until it turns to powder. Measure out 5 cups of oatmeal and only "powderize" that, NOT 5 cups "powderized" oatmeal).
  4 Mix all of the above.
  5 Add: chocolate chips, grated chocolate bar, and chopped nuts (any kind).
  6 Bake on greased cookie sheet (make golf ball sized balls) and bake about two inches apart. Bake for 8 -10 minutes. Do not overbake.

  Hearty Breakfast Cookies

  " These cookies are a delicious and hearty alternative to doughnuts or pastries. Also great to pack in lunches and on trips. Try one with your morning coffee or tea. For a slightly richer treat, use buttermilk in place of the water. Substitiute dates for the raisins if you prefer. "
  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 1 1/3 cups packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup wheat germ
  • 2 cups quick cooking oats
  • 1 teaspoon ground cinnamon
  • 1 cup raisins
  • 1/3 cup water
  1 In a large bowl, using an electric mixer, beat together butter, peanut butter, brown sugar, and vanilla until creamy. Beat in eggs and water or buttermilk.
  2 Mix together flours, oats, wheat germ, salt, cinnamon, and baking soda. Mix into peanut butter mixture. Stir in dates or raisins. Drop by ice cream scoopfuls 2 1/2 inches apart on greased cookie sheets. Flatten slightly.
  3 Bake at 350 degrees F (175 degrees C) for 18 - 20 minutes. Cool on cookie sheet for 2 minutes, then transfer to cooling racks. Store in an aritight container.

  Hermit Cookie

  " These can be made into either drop cookies or bar cookies. "
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 3 eggs
  • 3 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup raisins
  • 1/2 cup molasses
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  1 Preheat oven to 325 degrees F (375 degrees F for drop cookies). Grease cookie sheet.
  2 In large bowl cream together butter, sugar and spices. Beat in the eggs and mix until well blended.
  3 Sift in the flour, baking soda and salt and stir until well blended. Stir in molasses and raisins.
  4 To make bar cookies: Spread mixture on cookie sheet and bake for 25 minutes. Cut into bars while warm and let cool on wire rack.
  5 To make drop cookies: Preheat oven to 375 degrees F. Drop batter about 2 inches apart on greased cookie sheet and bake 12 to 15 minutes. Let cool on wire racks.

  Jailhouse Rocks

  • 1 cup butter
  • 2 1/2 cups white sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon vanilla extract
  • 1/4 cup water
  • 3 cups candy-coated chocolate pieces 1 Preheat oven to 365 degrees F (185 degrees C).
    2 In a medium bowl, cream together the margarine and sugar. Stir in the eggs one at a time.then stir in the water and vanilla. Add the flour and baking soda, mix until just combined. Finally stir in the candy coated chocolates.
    3 Drop by heaping spoonfuls onto an unprepared cookie sheet. Bake for 8 to 11 minutes in the preheated oven. Cool on wire racks.

    Cookie Mix in a Jar

    " Chocolate Covered Raisin Cookie mix in a jar with tag attached with directions on how to prepare the mix.     • 3/4 cup white sugar
    • 1/2 cup packed brown sugar
    • 1 cup chocolate covered raisins
    • 1/2 cup milk chocolate chips
    • 1 3/4 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    1 Mix together the flour, baking powder and baking soda.
    2 Layer ingredients in order given in a quart size '' wide mouth '' canning jar. Press each layer firmly in place making sure you really pack it down before you add the flour mixture, it will be a tight fit but it will work.
    3 Attach instructions to the jar: Chocolate Covered Raisin Cookies
    1. Empty cookie mix into large mixing bowl. Use your hands to thoroughly blend mix.
    2. Add 1/2 cup butter or margarine, softened at room temperature. DO NOT USE DIET MARGARINE Add 1 egg, slightly beaten and 1 teaspoon vanilla
    3. Mix until completly blended. You will need to finish mixing with your hands.
    4. Shape into walnut sized balls. Place 2 inches apart on a parchment lined cookie sheet. DO NOT USE WAXED PAPER.
    5. Bake at 375 degrees F (190 degrees C) 13 to 15 minutes until tops are very lightly browned. Cool 5 minutes on baking sheet. Remove cookies to racks to finish cooling.
    Makes 2 1/2 dozen
